Ingredients:


  1. 1 cup Basmati rice, rinsed and soaked in water for 30 minutes
  2. 2 tablespoons ghee or oil
  3. 1 bay leaf
  4. 4 green cardamom pods
  5. 4 cloves
  6. 1 cinnamon stick
  7. 1 medium-sized onion, sliced
  8. 1 teaspoon grated ginger
  9. 1 teaspoon minced garlic
  10. 1 small tomato, chopped
  11. 1/4 teaspoon turmeric powder
  12. 1/2 teaspoon cumin powder
  13. 1/2 teaspoon coriander powder
  14. 1/2 teaspoon garam masala powder
  15. Salt, to taste
  16. 2 cups water
  17. 1/4 cup chopped fresh cilantro (optional)


Instructions:


  1. Heat ghee or oil in a heavy-bottomed pan over medium heat. Add the bay leaf, cardamom, cloves, and cinnamon stick. Fry for a few seconds until fragrant.
  2. Add sliced onion and fry until golden brown.
  3. Add grated ginger and minced garlic. Fry for 1-2 minutes until the raw smell goes away.
  4. Add chopped tomato, turmeric powder, cumin powder, coriander powder, garam masala powder, and salt. Stir and cook for 3-4 minutes until the tomato is soft and the spices are fragrant.
  5. Drain the soaked rice and add it to the pan. Stir to coat the rice with the spice mixture.
  6. Add 2 cups of water and bring it to a boil.
  7. Lower the heat to a simmer and cover the pan with a tight-fitting lid. Cook for 15-20 minutes until the rice is fully cooked and the water is absorbed.
  8. Turn off the heat and let the rice sit covered for 5-10 minutes.
  9. Fluff the rice with a fork and garnish with chopped cilantro (if using).


Your Pulao rice is now ready to serve. Enjoy!
