Gujarati Dhokla is a popular snack from the western Indian state of Gujarat. It is made from a fermented batter of chickpea flour and spices, and steamed to perfection. The result is a soft and spongy cake-like dish that is both delicious and healthy.

Here is a simple recipe for making Gujarati Dhokla at home:

Ingredients:

  1. 2 cups of chickpea flour (besan)
  2. 1 teaspoon of sugar
  3. 1 teaspoon of salt
  4. 1 teaspoon of fruit salt (eno)
  5. 1 teaspoon of green chili paste
  6. 1 teaspoon of ginger paste
  7. 1 teaspoon of lemon juice
  8. 2 tablespoons of oil
  9. 1 cup of water
  10. 1 teaspoon of mustard seeds
  11. 1 teaspoon of sesame seeds
  12. 2 tablespoons of chopped coriander leaves

Instructions:

  1. In a large bowl, mix together the chickpea flour, sugar, salt, green chili paste, ginger paste, lemon juice, and oil.
  2. Gradually add water to the mixture and stir until you have a smooth batter.
  3. Cover the bowl and let the batter ferment for at least 2 hours.
  4. Once the batter has fermented, add the fruit salt and mix well.
  5. Grease a round or square dish with oil and pour the batter into it.
  6. Steam the dhokla for 10-15 minutes or until a toothpick inserted into the center comes out clean.
  7. In a small pan, heat the oil and add the mustard seeds. When the seeds start to crackle, add the sesame seeds and let them cook for a minute.
  8. Pour this tempering mixture over the steamed dhokla and sprinkle with chopped coriander leaves.
  9. Cut the dhokla into pieces and serve hot with mint chutney or tamarind chutney.

Enjoy the soft and spongy texture of this classic Gujarati snack. You can also experiment with different spices and flavors to create your own unique version of dhokla.
